The Viognier plot is located on a hill with clay-limestone soil. Clairette's plot is located at the foot of Mont Ventoux on stony soil. The estate has been working in sustainable agriculture for more than 15 years and has been in organic conversion since 2021.
Winemaking
The grapes are picked by hand during cool hours. It is crushed and cold pressed before being settled and vinified at low temperature. Each grape variety is vinified separately in stainless steel vats. This is followed by aging in barrels for 6 to 8 months.
Aging: Can be drunk now or kept for up to 3 years.
White Gravité
Dress : Limpid and brilliant with golden reflections.
Nose :Floral and spicy notes.
Mouth :Aromas of ripe white fruit, spices (cinnamon, vanilla), toasted almonds.
Food and wine pairings
Gravité blanc goes perfectly with sea bream ceviche, salmon tartare or fillet of sole. But also as an accompaniment to half-cooked foie gras or poultry in sauce.Vegetarian idea
Bulgur risotto with porcini mushrooms or a blanquette with setan.
