Soils : Stony and clay-limestone soils 
 
Winemaking : The grapes are picked by hand during cool hours. It is crushed and cold pressed before being settled and vinified at low temperature. Each grape variety is vinified separately in stainless steel vats. This is followed by aging in barrels for 6 to 8 months.
 
Aging : Can be drunk now or kept for up to 3 years.
