100% local, the oil is extracted from fresh green olives from our olive grove located at the foot of Mont Ventoux. It is then packaged by us, directly at the cellar.
Recipe idea: Candied eggplant in olive oil
Ingredients
- 2 eggplants
- 8 tomatoes
- 7 garlic cloves
- 1 onion
- olive oil Les Bellonis
- thyme, salt, pepper
Preparation
Wash and cut the eggplants into 1 to 2 cm slices. Put them in the oven, sprinkle with olive oil, salt and pepper, and let them cook with 4 cloves of garlic for 30 minutes at 120°C. Wash, mound, seed and cut the tomatoes. Sauté the chopped onion and the remaining garlic in olive oil. Add the tomatoes and thyme and cook for 40 minutes on very low heat. Remove the crushed tomatoes from the heat and let the mixture cool down. Place the eggplant and the crushed tomatoes in 3 or 4 layers on a plate. Serve with a green salad.
